Foodie Friday - Tomato Basil Pie


I've missed you Foodie's not like I haven't been cooking, or baking, it's just that most times, whatever is yummy is devoured before I smack myself in the head and say, "I should have taken a picture of that!"

Since I've had a few emails saying you missed Foodie Friday too, I shall try harder to smack myself sooner and grab the camera.

It's summer and that means fresh tomatoes and fragrant basil are in abundance.

I wish you could smell this pie or better yet taste that yummy cheesy filling fragrant with garlic and basil and fresh, ripe tomatoes.   Whip up a quick salad and you've got dinner.  If you have a carnivore in the family, a lovely grilled chicken breast is a nice accompaniment but totally unnecessary.
