It's Foodie Friday!!

Mmmm....Are you hungry yet?  That's ok because these yummy muffins from the Pioneer Woman's Cookbook take only a few common ingredients and even fewer minutes to whip up.

Here's the recipe:

Marmalade Muffins (Don't freak out marmalade haters..you know who you are!  There isn't any in here!)

2 oranges
2 sticks butter, softened
1 c. granulated sugar
2 large eggs
2 c. all purpose flour
1 c. buttermilk
1 t. baking soda
1 c. firmly packed brown sugar

Preheat oven to 375 degrees.  Grease 24 mini-muffin cups.

Using a microplane grater (here's the one I love), grate the zest from both oranges.  Be sure not to get any of the bitter white part.

Cream the butter and sugar until light and fluffy.  Add the eggs and beat well.

Sift the flour (or not!) and add to the batter.  Gently blend just until mixed in.

Combine the buttermilk, baking soda and orange zest.  Blend again just until all ingredients are moist.

Fill muffin cups 2/3 full.  A medium cookie scoop is just about right.

Bake for 12-17 minutes or until light brown.

While muffins are baking, juice the oranges.  Combine the juice with the brown sugar in a medium bowl.
Drizzle the muffins with the glaze as soon as they come out of the oven, thoroughly coating each muffin.
 
Now comes the hard part....eat just one!  Betcha can't!!  I'm getting these out of the house asap!!  I've already had.....5!!!  Shhhh...I'll keep your secret if you keep mine.  Pinky promise?
