Foodie Friday and a few giggles

Goodness,  it's Friday...already!  I need a couple more days in the week! 

I made a quick dinner of Mexican Lasagna for a family from church the other night who's going through some rough medical issues.  I forgot how quick, easy and colorful it is and so easy to customize to your family's tastes.  It's filling and easy on the budget too.   You can find a printable recipe at the link above.

Thanks for the GREAT and delicious-looking idea! I think I will try this for a friend who recently had surgery. I am sure there will be enough for them AND us!! ;)
